Domaine Faiveley has been producing wines in the same style as those of Bernard Billaud since taking up the reins in 2014. With Chablis vines that go back to 1815, this operation sits on 20 hectares of some of the most beautiful Chablis terroirs, creating chiselled wines of remarkable purity.

“As always, opens superbly in the mouth, mingling fine white fruit with a crystalline-pure minerality. Overall, clean, lingering, remarkable. Great things in store here.”

The prolific Michel Laroche actively pursues the development of the estate he inherited from his father, Henri, in the 1960s, with the help of his two daughters, Cécile and Margaux. Together they extract the purest expression of Chardonnay from their 4.5 hectares of Premier Cru in Fourchaume.

“Knockout old-viney aromas of citrus zest, flinty minerality, baked bread and licorice: very Chablis. Rich and tactile but also quite taut, with superb energy.”

The fruit is then vinified and matured at the Obédiencerie monastery, which has the oldest cellars in the village.

“It cuts a distinct figure from the other Blanchot with its raciness, lift, energy, texture, citrusy brightness and mouth-watering elegance. Highly unique, but also a great success. A must-have!”

“Pale, bright lemon-yellow. Captivating aromas of pineapple, grilled almond, coconut, iodine and flint. Concentrated, chewy and uncompromisingly dry on entry, then turns a bit silkier in the middle, offering savoury flavours of lemon drop, minerals, menthol, mint and hazelnut. Quite smooth in texture for such a powerful grand cru, but still youthfully tight. The very long, subtle, slowly mounting finish saturates the palate with dusty extract. This remarkably tactile wine boasts outstanding potential.”

A Courgis native, Thomas Pico is the darling of the new generation in Chablis. In 2004, he took over eight hectares of vineyards from the Bois d’Yver family estate, including the lieu-dit Pattes Loup, from which the estate gets its name, and converted them all to organic agriculture. Meticulously and slowly vinified with low sulphites, his wines are concentrated and marked by a distinct minerality.

“As is usually the case, this is bigger, richer and more powerful than any of the other wines in the range…. Despite the size, weight and richness there is ample acidity that maintains the balance and allows this to remain refreshing. Textbook Butteaux.”

Benjamin Laroche, the nephew of Michel (Domaine d’Henri), teamed up with a few others in 2012 to launch a merchant business with three lines that nicely capture the appellation’s terroirs: Haute-Couture, Cousu-Main and Dentelle. Working closely with trusted winegrowers, his wines possess a fully ripe profile.

“Sitting on the left bank of the Serein, a small river that traverses Chablis, the Les Forêts Premier Cru gives us a good introduction to Benjamin Laroche’s style: honest, dense and full, with a saline and lactic finish offering exquisite balance.”

“In much the same fashion as the Clos de Vougeot, this is inexpressive to the point of being almost mute, and it requires considerable agitation to coax the intensely floral-suffused aromas of spicy tea and dark berries to appear. There is stunningly good power and intensity to the very—make that very, very—backward broad-shouldered flavours that brim with both buckets of dry extract and an almost pungent minerality on the precise, dusty and massively long finish. I appreciate that I sometimes probably sound like a broken record with my ‘absolutely must have patience’ comments, but this is a wine that would be largely pointless to buy without the express intention of cellaring it for at least 12 to 15 years, and it should richly reward 20 to 25. This Côte de Nuits estate has made itself the reference for the Gevrey-Chambertin commune. Since the tragic loss of Denis Mortet in 2006, his son Arnaud has taken over as the head of the estate, and he continues to produce extremely sought-after wines focused on finesse and elegance.

“There is very solid concentration, weight and volume to the medium-bodied flavors that deliver plenty of punch and minerality on the admirably complex, balanced and lingering finish. This is a quality Gevrey Villages.”

Fifth-generation winegrower Pierre Naigeon settled in Gevrey-Chambertin and launched his own operation in 1996 with only one hectare of vines. In 2004, a 9-hectare estate became available, and he knew this was a golden opportunity. His work in the cellar is meticulous, performed with as little intervention as possible and reliance on intuition instead.

“With 1,098 bottles produced in 2014, Les Herbues is sourced from a plot of old Pinot Noir vines planted in 1955, located at the northern entrance to the commune of Fixin. Aged 12 months in French oak barrels (25% new), it offers an especially attractive aromatic palette as well as an ample and lengthy mouth.”

A young and talented winegrower, Maxime Cheurlin took over from his grandmother, Marie-Thérèse Noëllat, following the estate’s succession. The 5.5-hectare estate has impressive vineyard holdings. Maxime works without compromise. With the ambition of a large-scale producer, he has worked alongside his uncle, Emmanuel Rouget. An estate—and wines—worth watching.

“Here the expressive and equally fresh nose is appealingly spicy with its cool array of both red and dark berry fruit aromas that are trimmed in a hint of wood. There is a highly attractive sense of vibrancy to the well-detailed medium-bodied flavors that are shaped by relatively fine-grained tannins on the mildly austere but impressively complex finale.”

“Wonderfully elegant and racy on the palate, showing terrific energy and stony definition to the urgent wild berry, mineral and floral flavors. A dense yet weightless wine of great finesse and vibrancy—in other words, classic Grands Echezeaux.… Great inner-mouth tension and purity here.”

His son Christophe, an excellent technician, may step up to the helm one day, preferring an approach that focuses on the finesse of the fruit rather than extraction and new wood. Exemplary!

The wines impress with their aromatic finesse and silky smooth texture.

“From 0.32 hectares of vines planted in 1950 and 1951…. The palate is very harmonious, silky smooth and elegant. There is fine weight in the mouth, though this is more about tension and elegance, with a gorgeous, sensual, satin-like touch to the finish. This could become one of the best wines from this vineyard.”

Fond memories of Burgundy drew him back, and this talented winemaker set himself a new goal— paying the respect due to the terroir of Burgundian wines. When he established his own brokerage in 2009, he succeeded in making this dream come true. He developed Chardonnays on a small scale from a select number of parcels, and then his micro-cuvées were vinifi ed in dedicated cellars rented by his business. The parcels that Bachelder selects for his winemaking are, where possible, farmed organically.

Founded in 1880 by Simon Bize, this flagship estate of Savigny-lès-Beaune continued to be carefully managed nearly a century later by Patrick Bize, the founder’s great-grandson. Although Patrick Bize passed away suddenly in 2013, the estate is regarded as one of the elite of Savigny and possibly even Burgundy itself. His wife, Chisa, and his sister, Marielle Bize-Grivot, have now taken over the reins.

“A deft application of wood sets off cool and pretty aromas of pear, orange peel and lemon rind. The lightly mineral-inflected middle-weight flavors possess a lovely sense of underlying tension before terminating in a mildly austere but persistent finale. A very good choice for value.”

Henri Boillot is a determined and extremely meticulous winegrower who, in 1974, founded the family estate in Volnay. Responsible for the winemaking as of the 1985 vintage, he vinifies with his son Guillaume the roughly 15 hectares that make up the operation, complemented by a serious brokerage business.

“This is slightly riper with its less reserved gently nutty nose of pear, acacia, lilac and white peach. There is excellent punch and volume to the delicious and seductively textured medium-bodied flavors that possess a subtle minerality on the caressing, balanced and impressively long finish.”

“The new bottle, stamped at the base with the estate’s name, reveals a wine of vibrant purity, a silky, citrusy texture punctuated with saline notes, offering a multidimensional feel in an intense aromatic length that is boundless.”

Until 2010, François worked alongside his father and his brother Jacques. The two brothers decided to split the property in 2010 and to create their own estate. The artisan-scale operation covers only 6.5 hectares of vines—all growing Chardonnay under the appellations of Puligny-Montrachet, Chassagne-Montrachet and Saint-Aubin.

“It has a very reserved, almost Chablis-like bouquet that is very well defined, cold granite and flint notes emerging from the glass.… The acidity here is nicely judged and whilst its Village cru status does not convey any sense of ‘longueur’ here, there is a sense of precision and vivacity.”

Patrick has headed winemaking operations since 1974, following studies in oenology, producing wines with a traditional profile. Fermentation in wood and long maturation on lees have allowed them to obtain their typical Meursault signature. These are deep and sophisticated wines.

The Morey and Coffinet families have a long winemaking tradition in Chassagne-Montrachet. When Michel Morey and Fabienne Coffinet were married in 1978, they created their estate from parcels that belonged to their respective fathers. The 8.5 hectares of vines they currently own are vinified by Michel Morey, helped by his son Thibault who brought with him a breath of fresh air.

“A superb classic Côte de Beaune white, this Chassagne-Montrachet starts off on notes of ripe pear and apple, linden, melon and fennel, against a precise and well-calibrated maturity. Lactic and just-churned butter notes mingle wonderfully in a fresh, drawn-out and coated mouthfeel.”
