Time for a classic, with a timeless cocktail classic: vermouth. Encourage local producers with the incredible Kayak 23, a red vermouth from here, with vegetal and red fruit notes. It’s an excellent choice for vintage cocktails like the Negroni, Americano, or Manhattan.
45 mL (1 1/2 oz.) Canadian whisky
20 mL (3/4 oz.) red vermouth
1 drop Angostura bitters
1 maraschino cherry
5 or 6 ice cubes
Pour the whisky, red vermouth, and Angostura bitters in a mixing glass filled with ice. Stir with a mixing spoon for 8 to 10 seconds. Strain the content of the mixing glass into a martini glass, using an ice strainer. Garnish with a maraschino cherry.
