In Chablis, the northernmost sub-region of Burgundy, there is of course the Chablis appellation which encompasses most of the Chardonnay white wines of the region. But you’ll also find the Petit Chablis appellation for vineyards on hilltops and higher in altitude, where soils are mostly composed of a limestone stratum younger than the rest of the region. But the latter offers vibrant and invigorating wines, very fitting as an aperitif and definitely with shellfish and seafood.
