Emiliana Coyam
This biodynamic blend of Syrah and Carménère grapes features notes of blackcurrants, spices, eucalyptus and cocoa, supported by structured tannins. Aged for 13 months in oak casks, it has a pronounced woody flavour that calls to mind the reddish soil, dense forests and majestic mountain range that shape the country’s imposing landscape. In fact, coyam is a word in the Mapuche language that means “forest.” Coincidence? Certainly not—it’s a tribute to Chile’s indigenous roots.
The biodynamic production process follows the natural, solar and lunar cycles, in keeping with the world view of the country’s founding peoples. It’s a philosophy that’s also reflected in Emiliana’s mission: to reconnect people to the earth. This unfiltered red made from grapes harvested by hand is a celebration of different varietals coming together, in much the same way a variety of cultures form the heart of Chile.
Emiliana Adobe Pinot Noir Reserva
This organic Pinot Noir comes from Valle Central, where grapevines were planted during Spanish colonization in the 16th century. Now the country’s main agricultural and viticultural region, the valley is surrounded by two mountain ranges that protect the area from the coastal winds, which means it benefits from a Mediterranean climate where it’s hot during the day and cool at night—ideal conditions for grapes to thrive.
With its clear ruby-red colour, aroma of strawberries and spices, ripe tannins and lingering finish, the elegant Adobe Pinot Noir Reserva is a perfect expression of this location’s rich terroir. It also reflects the colonial heritage that shaped Chilean culture, from the planting of grapevines—particularly European varieties like Pinot Noir—to the Spanish language, not to mention the Catholic traditions and the colonial architecture present in the lively cities of Santiago and Valparaíso, the latter having been named a UNESCO World Heritage Site.
Emiliana Adobe Charbonnay
This is a delectable, mellow Chardonnay that will transport you to Valle de Casablanca, the land of white wine. This region owes its reputation to the strong influence of the ocean winds as well as the Humboldt Current flowing north from Antarctica, which make the grapes ripen more slowly, thereby adding complexity to their flavour.
Emiliana Adobe Chardonnay fully illustrates the maritime identity of a country with a rich commercial, cultural, tourism and food scene and whose coastline stretches over 6,435 km. One sip and you’ll practically feel the sea breeze through your hair, the salt air on your skin and the sunshine at the beach. With hints of pineapple, butter, lemon and peach, this white pairs beautifully with fish recipes like ceviche, a very popular dish in Chile that was actually invented in neighbouring Peru.
Emiliana Novas Sauvignon Blanc
With its pale yellow hue, aroma of citrus, tropical fruit and herbs, generous body and refreshing acidity, Emiliana Novas Sauvignon Blanc absolutely shines in the Espace Cellier. And it’s no surprise—novas is a Latin word formerly used by astronomers to refer to the birth of a star.
The name is well suited to this exceptional white produced by a country known around the world as a premier destination for stargazing. The dry climate in the north, high plateaus and low levels of light pollution have attracted some of the largest observatories.
