Preparation
This artisanal semi‑firm cheese is made from pasteurized milk and stands out for its careful aging, despite being lactose‑free. Rolled by hand, it is coated in a layer of vegetable ash that forms a spiral reminiscent of a bale of hay—a deliberate nod to its name. This ash layer also plays a key role: it regulates humidity and promotes a more even development of the paste.
