This cheese takes its name from the unique location of the creamery between Quebec and the United States, its ashy center line symbolizing the Lacolle border crossing. Under its smooth and supple texture, this semi-soft washed-rind cheese reveals lactic, animal and vegetal notes, which are highlighted by the roundness and buttery, honeyed and fruity profile of Yvan Quiron’s Chardonnay.
