Preparation
The use of vegetable ash softens bitterness and, over time, allows buttery and milky flavours to develop. Light and creamy in texture, Pleine Lune pairs beautifully with more delicate wines, especially reds from the “Fruity and light” profile, such as Domaine Inselberg’s blend. The gentle intensity of this bloomy rind cheese tends to bring out the wine’s fruity character.
Other possible pairings: Aromatic and mellow white wine, Fruity and medium-bodied rosé wine, dry and semi-sweet cider.
