Preparation
A semi firm washed rind cheese, Sorcier de Missisquoi first catches the eye with its central line of vegetable ash, which visually structures its supple, elastic paste. The rind evokes damp hay, while the paste develops a delicately hazelnut touch. With measured intensity, it steals the show both on a cheese board and once melted, in raclette—or, more boldly, on pasta or homemade pizza! To create a pairing built on complementary textures and aromas, an aromatic, mellow white wine forms the perfect bridge. The Chardonnay from Coteau Rougemont, with its breadth and generosity, embraces the cheese’s suppleness, while its freshness supports the whole. The result: an absolutely harmonious match.
