La Raclette de Compton is an organic, farmstead, semi firm washed rind cheese made from raw milk. Beneath its copper coloured rind, the paste becomes supple, coating, and irresistibly melty as soon as it’s warmed. It stretches over roasted potatoes, flows generously into a perfectly golden grilled cheese, adds depth to a juicy burger, or can simply be enjoyed in a classic raclette with vegetables and charcuterie. This richness calls for a light, refreshing red. Le Litre du Ridge from Domaine du Ridge fits the bill perfectly: all fruit, easy drinking, and low in alcohol, it refreshes the palate, revives each bite, and keeps the pairing firmly in a convivial, laid back register.
