Preparation
La Raclette de Compton is an organic, farmstead, semi firm washed rind cheese made from raw milk. Beneath its copper coloured rind, the paste becomes supple, coating, and irresistibly melty as soon as it’s warmed. It stretches over roasted potatoes, flows generously into a perfectly golden grilled cheese, adds depth to a juicy burger, or can simply be enjoyed in a classic raclette with vegetables and charcuterie. This richness calls for a light, refreshing red.
