Mojito royale

- 60 ml (2 oz.) amber rum
- 60 ml (2 oz.) sparkling wine
- 60 ml (2 oz.) club soda
- 10 ml (1/3 oz.) lime juice
- 1 tsp. sugar
- 8 to 10 fresh mint leaves
- Ice cubes
Combine the lime juice, sugar and mint leaves in a highball glass and crush using a muddler.
Add the ice cubes, amber rum and club soda.
Top up with champagne or sparkling wine.
Stir with a mixing spoon.
Garnish with a mint leaf.
