As part of this young Australian succession jaded with heady and wines black like ink invading the market, the winemaker signs digestible cuvées that surprise as much by their container as their content. Fermented with native yeasts and without filtration, this "pétillant naturel" (French for "natural sparkling") displays scents of lime, peach, pear and apple in a delicate and light ensemble. Perfect with fish tacos or chips in front of a good TV series!
