CHÂTEAU ANGELUS, CHAI CARILLON
Berceau des vignobles les plus prestigieux de la Rive Droite, le Libournais propose une mosaïque de sols et sous-sols qui contribuent à l’unicité des crus d’un terroir à l’autre. Bien que Pomerol et Saint-Émilion possèdent plusieurs similitudes, on remarquera une présence du merlot encore plus marqué à Pomerol, où les vins proposeront des parfums de fruits noirs, une texture veloutée et un boisé plus modéré.
À Saint-Émilion, certains châteaux miseront sur la présence un peu plus évidente des cabernets, qui conféreront une structure plus austère, des acidités plus marquées, et qui bénéficieront d’un élevage plus patient en fût de chêne.

DOMAINE DE CHEVALIER
Berceau des plus grands blancs secs de Bordeaux, ceux de Pessac-Léognan y sont très expressifs. Une véritable palette aromatique mêlant les fruits jaunes, la fleur d’acacia, le pamplemousse et la mangue fraîche définit les vins, auxquels l’élevage en fût apporte encore plus de complexité. À la fois amples et désaltérants, certains manifestent même de magnifiques expressions minérales.
Du côté des vins rouges, l’équilibre résonne aussi. Généralement plus souples et accessibles en jeunesse, on pourrait les présenter comme étant à mi-chemin entre les crus les plus accessibles du Libournais et les plus austères et racés du Médoc. Ils contiennent d’ailleurs généralement plus de merlot que ces derniers, ce qui rend l’analogie encore plus pertinente. À ce profil viendra également s’ajouter une nuance aromatique qui peut rappeler la fumée.

CHÂTEAU LÉOVILLE BARTON
Située la plus au nord, l’appellation communale de Saint-Estèphe est réputée pour ses vins costauds et puissants, parfois même austères en jeunesse. Excellents vins de garde, on leur associe un caractère épicé, propre à l’appellation.
Vient ensuite sa voisine Pauillac, probablement celle qui abrite le plus de vins d’exception. Dominée par le cabernet-sauvignon, ont dit qu’elle incarnerait à la fois la puissance de Saint-Estèphe, mais aussi certains caractères de Saint-Julien, plus au sud, reconnue pour la minéralité et l’élégance des vins qu’elle produit. Cette dernière compte un peu plus de merlot que ses voisines, ce qui contribue à son profil charpenté certes, mais plus en rondeur.
La plus au sud du Médoc, c’est l’incontournable Margaux. Dominée par le cabernet-sauvignon mais où le merlot est également manifeste, c’est l’appellation à laquelle on accorde une agréable souplesse et un velouté exquis. Une main de fer dans un gant de velours!
