The sixty or so hectares owned by the Fouassier family in Sancerre are grown according to biodynamic principles. Natural production, fermented with indigenous yeasts, all is planned so that Sauvignon can fully express itself. Apple, ripe pear, citrus zest and spices make up this ample and quite fresh white.
