It’s vinified in whole bunches, which lends the wine additional structure thanks to the tannic input of the grape stems (the woody part that keeps the grape bunches together); it also benefits from an 18-month cask aging, including 20% of new casks. A very versatile style of wine that will be great as much with grilled white meats as with delicate red meats.
