Cradle of viticulture, Georgia has aroused interest more recently with its maceration wines (orange) from traditional winemaking in Qvevri. These are large terracotta amphorae kept underground and the cuvaison time (contact with the skins) lasts for several months. The result? An intense bouquet that combines scents of candied apricot, orchard fruit, sundried tomato and aromatic herbs, but also a tannic mouth without being harsh. And be careful! Serve it slightly chilled but not too cold to prevent the tannins from hardening and the wine from becoming too drying. A delight with a Margherita pizza.
