Kind of like a response to more conservative producers in the way they make wine and snob the natural philosophy, the name of this cuvée, roughly translated to “leave my grapes alone” or let me be, will make you smile. But its content is seriously seductive. Without added sulphites, this lovely Chardo produced in stainless steel tanks and aged on lees for six months reveals scents of white-fleshed fruits and a floral touch, highlighted by a subtle saline touch, allowing it to play the minerality card. Exquisite with a salmon filet or as an aperitif with a few local cheeses.
