After the spontaneous fermentation of the cider, the marc of the Marquette grape variety from Les Bacchantes vineyard is added to the vat for two weeks of maceration. These solid parts are then extracted from the tank and the cider rests on its lees for a few weeks before bottling. The result is a cider with a festive bubble, pleasantly aromatic (wild fruits) and medium-bodied. For lovers of farm ciders!
