The Lobo, Cortland, McIntosh and Russet varieties are macerated for 24 hours and fermented at low temperature. Made with a dose of maple syrup to stimulate sparkling, this cider is also matured on wooden slats for eight months. The result? After disgorging by hand, the cuvée seduces with its fine, very pleasant effervescence.
