Scallop and salsa bites

Ingredients
- 330 g (2/3 lb) small scallops

30 ml (2 tbsp) lime or lemon juice

2 ml (1/2 tsp) ground cumin

Salt and ground black pepper
Salsa:
- 125 ml (1/2 cup) seeded tomatoes, diced

125 ml (1/2 cup) cucumber, diced

125 ml (1/2 cup) yellow pepper, diced

125 ml (1/2 cup) mango, diced

125 ml (1/2 cup) strawberries, diced

60 ml (1/4 cup) fresh coriander, chopped

Salt and ground black pepper
Preparation
- Slice the scallops in half, widthwise.
- Place in a bowl and drizzle with lime or lemon juice.
- Add the cumin and season generously. Stir and set aside.
- In a separate bowl, mix the salsa ingredients.
- Fill small appetizer spoons with salsa and top each with a slice of scallop.
- Place on a tray and serve to your guests.
