Madame Pommery, the genius behind the label

The history of this great Champagne producer began in Reims in the first half of the 19th century. But it is when Madame Pommery takes over the business after the death of her husband in 1858, that the brand really takes off. Her arrival at the head of the company marks a turning point in the history of the brand. Eager to distinguish herself from other champagne houses, she launched a series of innovations that would later lead to the Pommery name becoming so famous. This innovative spirit is reflected both in the management of the vineyard and the property but also in the style of the wines.

Great projects for a great champagne

The ambition to differentiate itself from its Champagne neighbors led to the inauguration of a major project in 1868: the conversion of the chalk tunnels into cellars. Dug 30 meters underground, the galleries extend over 18 km. It is these cellars that will allow Pommery champagnes to refine and develop all their complexity thanks to optimal aging conditions. The buildings were also renovated and Madame Pommery suggested to her teams to take inspiration from the English style, since several fashions come from across the Channel. As this architectural style differs from the Champagne traditions, it would be another opportunity to stand out!

At the same time, the vineyard was meticulously enlarged to guarantee a regular supply of quality grapes. Care was taken to select vines from the different terroirs of the region that make up the mosaic of soils of the Champagne region. This diversity still allows the house to create blends that highlight these different characteristics.

Changes in the style of the wines

Until the end of the 19th century, champagnes were generously dosed, meaning that they had a very sweet profile. Madame Pommery innovates again by proposing from 1874 the very first brut champagne, with a much less sweet taste. Always at the forefront, Pommery's brut champagne will become a reference of style and will gradually lead to a change in the taste of champagne lovers. Today, the range of Pommery champagnes is varied, but the Royal Brut remains an essential model.

THE DOSAGE

The liqueur de dosage is added to the wine before corking. It is generally composed of cane sugar dissolved in wine. One can thus choose to bring a little more roundness and sweetness at this stage or rather choose to retain the freshness and the personality of the wine. The champagnes are then identified according to their dosage:
