  • 30 ml (1 oz.) amber rum
  • 20 ml (2/3 oz.) white rum
  • 15 ml (1/2 oz.) lime juice
  • 10 ml (1/3 oz.) cane syrup (simple syrup)
  • Splash of citrus liqueur
  • 3 or 4 crushed ice cubes
  • 1 wedge of lime
  • 1 sprig fresh mint

In a shaker
Preparation

Combine crushed ice and ingredients except lime and mint in a shaker.

Shake vigorously for 8 to 10 seconds.

Pour into an old-fashioned glass.

Garnish with lime wedge.

Add sprig of mint.

The Mai Tai was invented in 1944 by Victor J. «Trader Vic» Bergeron, in his tiki restaurant in California. Using Jamaican rum as his base, he combined it with lime and added a subtle hint of almond. Upon tasting this new drink, two of his friends exclaimed «mai tai,» a Tahitian expression meaning «the best of them all.»
