A feast for the eyes and the taste buds, our watermelon and feta salad is a showstopper! Go ahead and revisit the traditional Greek salad with a perfect blend of melon and feta, combined with our cucumber, tomato, lemon, and fresh herb vinaigrette, which can be prepared a few hours before your guests arrive. You can also cut your watermelon and feta ahead of time, and store them in the fridge until you’re ready to serve. Easy peasy!

Or change it up!

You can also create your own variety – cucumber or avocado cubes, or marinated and grilled tofu cubes for some added protein! Serve your salad with thick slices of lightly oiled and grilled bread, or a well-stocked deli-meat platter.

Triple-melon and feta Greek salad

Preparation: 15 minutes
Makes 4 to 6 servings

Ingredients

50 Various melons (cantaloup, watermelon, honeydew), cut into 50 2.5 cm (1 in.) X 1.25 cm (1/2 in.) cubes
10 cubes of feta cheese, 2.5 cm (1 in.) X 1.25 cm (1/2 in.)

Vinaigrette
60 mL (1/4 cup) olive oil
1 lemon, juice and zest
5 mL (1 tsp) honey
1 tomato, seeded and finely chopped
1 mini cucumber, finely chopped
30 mL (2 tbsp) basil, minced
30 mL (2 tbsp) chives, minced
30 mL (2 tbsp) mint, minced
Salt and pepper

 

Preparation

Vinaigrette
1. In a bowl, combine the oil, lemon juice and zest, and honey.
2. Add the tomato, cucumber, and herbs. Season with salt and pepper.
3. Cubes: In a serving dish, assemble the salad into a large cube, alternating the small melon and feta cubes.
4. Drizzle with vinaigrette.

Tip

Our vinaigrette recipe calls for tomatoes and grated cucumbers, giving it a unique texture. You can also add shredded cheese or pesto.

What to drink with this Greek salad?

A vodka cucumber cooler is the perfect way to kick off a casual happy hour. Its flavours will bring out the melon in the salad, whereas the citrus, cucumber, and mint aromas are reminiscent of the lemon and fresh herbs in the vinaigrette. If your guests are into sparkling wines, a “fruity and vibrant” prosecco with pear, melon, and lime aromas pairs perfectly with this dish. Last but not least, a simple Pinot Gris with aromas of green apple, cantaloupe, and pear, is sure to be a hit, while highlighting the freshness of the dish!
