Chèvre des neiges-and-grapefruit crostinis

Ingredients

12 baguette slices

Olive oil

15 mL (1 tbsp) Maldon or other sea salt

15 mL (1 tbsp) grapefruit zest

250 mL (1 cup) Chèvre des Neiges, room temperature

12 segments of pink grapefruit

12 mint leaves

Salt and freshly ground pepper

 

Directions

  1. Preheat oven to 200°C (400°F).
  2. Place baguette slices on a baking sheet, brush with oil, and season with regular salt and pepper. Toast the slices in the oven until golden, 5 to 10 minutes.
  3. In a small bowl, combine the Maldon salt and the grapefruit zest. Spread the Chèvre des Neiges on the toast slices, garnish with a grapefruit segment, a mint leaf and a dash of the salt mixture.
