Basic tomato sauce

1 can (796 ml) crushed tomatoes (or 8 plum tomatoes peeled and seeded)
A splash of olive oil
1 medium yellow onion
3 cloves garlic
Fresh or dried herbs (thyme, oregano, bay leaf, basil, etc.)
- Thinly slice the garlic and onion. Lightly brown them in the olive oil.
- Transfer the garlic and onion to a saucepan. Add the tomatoes and dried herbs (if using them).
- Bring to a boil, reduce the heat and simmer for 30 minutes.
- If you are using fresh herbs, add them at the end to maximize their flavour.
Tips and Tricks
Let your imagination run wild and give some attitude to the basic sauce. Here are some easy variations.
Pink: Add cream and grated Parmesan to taste.
Bolognese: Sauté ground beef, pork and/or veal along with garden vegetables (celery, carrot, bell pepper, etc.) and add them to the sauce.
Game: Did you have a good hunting season? Then add browned venison or moose meat. Some sautéed mushrooms will make for a complete woodsy experience.
Spicy: Replace part of the ground meat with merguez or spicy Italian sausage meat.
Pulled: For a different texture, replace the ground meat with your choice of braised meat that you’ve shredded beforehand.
