Eduardo Torres Acosta, a native of the Canary Islands and a lover of volcanic soils, chose this fiery mountain as his adopted home. In both vineyard and cellar, everything is done naturally: spontaneous fermentation in concrete tanks, respectful ageing, and bottling without filtration or fining. The result is a sincere, living wine—wild yet elegant—that captures the mineral depth and raw power of Etna. Yes, with calf’s liver or grilled sausages. Yum!
