Because it’s apple season after all, now is the perfect time to get to know natural unfiltered ciders. Pick one or all of these six Origine Québec products, sure to wow friends at your next aperitif.

Limited quantity

  1. Made with the Honey Crisp, Eden and Pinova varieties, thanks to the complicity of a neighboring winegrower from Shefford, this cuvée in which St-Pépin berries (hybrid grape variety) have been macerated, is expressed with a pleasant freshness. Balanced and thirst-quenching, this cider is excellent as an aperitif, but it will enhance spring rolls, a fennel and feta salad or even grilled peaches with honey garnished with mascarpone mousse.

  2. Discover this extra-dry, unfiltered cider highlighting the Rubinette apple variety. Recognized for its flavourful qualities, it brings freshness and fruitiness to the cuvée, as well as an enjoyable hint of tannins. The effervescence is obtained naturally, the producer suggests serving it with fried chicken or even pasta in cream sauce.

  3. Always quite creative, Martin Laroche and Mylène Gaudette have fashioned a cuvée that pleasantly combines the fruit of the apple with the refreshing and welcome bitterness of the hops. The result? A cider with delicate effervescence is obtained by fermentation in the bottle, delivering a balanced profile with notes of apple and white flowers. Perfect for an aperitif, but also to accompany grilled sausages or corn chips with your favourite salsa.

  4. While 80% of the apples used to make this cider were picked very ripe and lightly sundried for more intense flavours, they were then crushed and left to ferment using native yeasts. A long cold fermentation follows, before the cider is bottled without being filtered, loaded with a touch of residual sugar to promote natural foaming.

  5. It was after an episode of frost in 2021 that the inspiration came for the creation of this cider. After a moment of panic about the flowering potential of the apple trees, the estate called on a beekeeper who was kind enough to bring his hives on site. A product was born from this story that would combine apples and bee honey. The second fermentation is done naturally in the bottle, and the cider is unfiltered. Perfect to accompany Asian cuisine or even warm goat cheese and honey canapés.

  6. Magnificent collaboration with the people at Milton and Château de Cartes, Nordiq is part of this movement that seems to be happening among several cider makers. A trajectory towards natural products, a strong identity and a place of choice at the table. Combining equal parts Rubinette and Golden Russet cider apples, submitted to a second fermentation over Vidal, Frontenac Gris and Ste-Croix grape pomace, this cider will stand out alongside a beet carpaccio with goat cheese thanks to its tension, fruity and floral explosion, as well as a silky tannic structure.
