Born from an appellation bordering Sancerre, this cuvée is a reference to the terroir where the vines grow, a Kimmeridgian soil similar to the one found in Chablis. The Sauvignon Blanc is harvested a few days later to obtain a certain depth, then the wine is aged on lees for 14 months and part of the cuvée sees some new oak casks. The result? An ambitious but totally balanced cuvée displaying a pleasing roundness and scents recalling citrus, hawthorn, clover flower and a hint of wood. Treat yourself to some lobster or white fish in white butter.
