A very old local variety found in southeastern Piedmont, Timorasso offers a micro-production sought by a highly evolved public. Aged for 8 months on its lees, Caespes displays a nice roundness on the palate, a biting acidity and a profile that evokes ripe apple, pear, straw, lemon and rock dust.
