Mostly known for its implication in Cava, Spanish bubblies made using the traditional method, the Xarel-lo varietal is getting increasing recognition in still wines. Light in alcohol but quite dry, we completely fell for this organically-produced wine with no added sulphites. Its light-as-air feel and lively attack make this the ideal aperitif. It expresses saline notes, scents of green apple and a vegetal note recalling cilantro.
