François Morissette, a Quebec native who has lived in the Niagara Peninsula for the past 15 years, makes internationally acclaimed natural wines. His juices are fermented in a wide variety of containers that allow him to express the aromas of the grape varieties he grows in the most vibrant way. Irrévérence is a very aromatic orange wine. Each grape variety is vinified separately in foudres, stainless steel vats and amphoras. 12 months of aging on lees before blending, then 12 months of aging in foudres and concrete vats. Bottled without filtering or fining. On the nose, aromas of cooked apple, honey and jasmine. On the palate, the minerality brings a chalky, almost creamy aspect. Lots of texture, balanced by a sustained acidity. Ideal wine to accompany foie gras or a tartiflette.
