After the spontaneous fermentation of the cider, the grape marc from Le Chat Botté vineyard, made from 100% hybrid grape varieties, is added to the vat for two weeks of maceration. These solid parts are then extracted from the tank and the cider rests on its lees for a few weeks before bottling. The result is a cider with a festive bubble, pleasantly aromatic (red fruits and candy) and medium-bodied. Something funky and frizzy wine lovers will enjoy!
