Since 2008, Lighthall has been showcasing the full potential of Prince Edward County’s terroir in Ontario, producing both vegan wines and sheep's milk cheeses with a minimalist, eco-friendly approach. The must is fermented dry in stainless steel tanks, then transferred to Charmat tanks for secondary fermentation. Upon release, the wine is lightly filtered and dosed. Its light bubbles and biting acidity highlight flavors of grapefruit and green apple.
