Decadent buffalo cauliflower wings
Ingredients
Wings :
- 250 ml (1 cup) flour
- 5 ml (1 tsp) salt
- 5 ml (1 tsp) paprika
- 5 ml (1 tsp) onion powder
- 5 ml (1 tsp) garlic powder
- 250 ml (1 cup) buttermilk
- 1 large cauliflower, cut into florets
- Sesame seeds (optional)
- Spicy oil (optional)
Buffalo sauce :
- 80 ml (1/3 cup) melted unsalted butter
- 180 ml (3/4 cup) chili sauce
- 60 ml (1/4) cup brown sugar
- 30 ml (2 tbsp) cider vinegar
- Hot sauce (optional)
Homemade ranch sauce :
- 250 ml (1 cup) mayonnaise
- 125 ml (1/2 cup) sour cream
- 5 ml (1 tsp) cider vinegar
- 5 ml (1 tsp) dried dill
- 5 ml (1 tsp) onion powder
- 2,5 ml (1/2 tsp) garlic powder
- 2,5 ml (1/2 tsp) paprika
- Ground pepper, to taste
Preparation
- Preheat oven to 375 °F (190 °C).
- Line two baking sheets with parchment paper.
- Set aside.
- In a large bowl, whisk together flour, salt and spices.
- Add the buttermilk.
- Mix well until the mixture is fairly thick.
- Dredge cauliflower in batter until evenly coated.
- Shake off excess batter.
- Transfer cauliflower to prepared baking sheets.
- Bake for 30 minutes.
- Turning the pieces halfway through.
- While they’re in the oven, make the sauces.
- For the Buffalo sauce, combine all the ingredients in a bowl.
- At this point, you can also add the hot sauce of your choice.
- For the ranch sauce, combine all the ingredients.
- Keep in the fridge until you’re ready to serve.
- Once the cauliflower is cooked, mix half the "wings" with the Buffalo sauce.
- Gently toss to coat nicely.
- Repeat with the second half.
- Sprinkle sesame seeds over the top.
- Drizzle with the spicy oil, if using.
- Serve immediately with ranch sauce.
