Decadent buffalo cauliflower wings

Ingredients

Wings :

  • 250 ml (1 cup) flour
  • 5 ml (1 tsp) salt
  • 5 ml (1 tsp) paprika
  • 5 ml (1 tsp) onion powder
  • 5 ml (1 tsp) garlic powder
  • 250 ml (1 cup) buttermilk
  • 1 large cauliflower, cut into florets
  • Sesame seeds (optional)
  • Spicy oil (optional)


Buffalo sauce :

  • 80 ml (1/3 cup) melted unsalted butter
  • 180 ml (3/4 cup) chili sauce
  • 60 ml (1/4) cup brown sugar
  • 30 ml (2 tbsp) cider vinegar
  • Hot sauce (optional)


Homemade ranch sauce :

  • 250 ml (1 cup) mayonnaise
  • 125 ml (1/2 cup) sour cream
  • 5 ml (1 tsp) cider vinegar
  • 5 ml (1 tsp) dried dill
  • 5 ml (1 tsp) onion powder
  • 2,5 ml (1/2 tsp) garlic powder
  • 2,5 ml (1/2 tsp) paprika
  • Ground pepper, to taste

Preparation

  1. Preheat oven to 375 °F (190 °C).
  2. Line two baking sheets with parchment paper.
  3. Set aside.
  4. In a large bowl, whisk together flour, salt and spices.
  5. Add the buttermilk.
  6. Mix well until the mixture is fairly thick.
  7. Dredge cauliflower in batter until evenly coated.
  8. Shake off excess batter.
  9. Transfer cauliflower to prepared baking sheets.
  10. Bake for 30 minutes.
  11. Turning the pieces halfway through.
  12. While they’re in the oven, make the sauces.
  13. For the Buffalo sauce, combine all the ingredients in a bowl.
  14. At this point, you can also add the hot sauce of your choice.
  15. For the ranch sauce, combine all the ingredients.
  16. Keep in the fridge until you’re ready to serve.
  17. Once the cauliflower is cooked, mix half the "wings" with the Buffalo sauce.
  18. Gently toss to coat nicely.
  19. Repeat with the second half.
  20. Sprinkle sesame seeds over the top.
  21. Drizzle with the spicy oil, if using.
  22. Serve immediately with ranch sauce.
