Spinach and cheese stuffed baguette

Ingredients

  • 1 baguette, cut in half lengthwise

Stuffing:

  • 45 ml (3 tbsp) olive oil
  • 1 onion, minced
  • 2 garlic cloves, minced
  • 2 L (8 cups) fresh spinach, destemmed
  • 250 ml (1 cup) mozzarella, grated
  • 250 ml (1 cup) sharp cheddar, grated
  • 125 ml (1/2 cup) fresh goat cheese, crumbled
  • Freshly ground pepper

Preparation

  1. Preheat oven to 180 °C (350 °F).
  2. Hollow the baguette halves to create a cavity.
  3. Put the two pieces of baguettes on a baking sheet.
  4. Heat the oil in a pan.
  5. Sweat the onion and garlic.
  6. Add the spinachs.
  7. Continue cooking until they’re wilted.
  8. Remove from the heat.
  9. Add the cheeses.
  10. Stir.
  11. Add salt and pepper.
  12. Spread the spinach and cheese mixture in the cavities of both baguettes.
  13. Put in the oven for about 10 minutes, or until the cheese is golden brown and the baguette is crispy.
  14. Slice and serve immediately.
