Ingredients
  • 45 ml (1 1/2 oz.) spiced rum
  • 15 ml (1/2 oz.) almond liqueur
  • 60 ml (2 oz.) pineapple juice
  • 10 ml (2 tsp.) sugar
  • 2 sprigs of fresh mint
  • Quarter of fresh pineapple, cut into pieces
  • Ice cubes
  • Quarter of pineapple for the garnishing

Combine the spiced rum, almond liqueur and pineapple juice in a shaker.

Add the ice cubes and set aside.

Place the pieces of pineapple and the fresh mint in a high edged container.

Using a hand held blender, mix together until liquid.

Pour into the shaker and add half of the sugar.

Shake vigorously for 8 to 10 seconds or until even.

Frost the rim of an old-fashioned glass with sugar.

Strain into the old-fashioned glass using an ice strainer and a sieve.

Garnish with a piece of pineapple.
