Scallop and salsa bites

Ingredients

  • 330 g (2/3 lb) small scallops
  • 30 ml (2 tbsp) lime or lemon juice
  • 2 ml (1/2 tsp) ground cumin
  • Salt and ground black pepper

Salsa:

  • 125 ml (1/2 cup) seeded tomatoes, diced
  • 125 ml (1/2 cup) cucumber, diced
  • 125 ml (1/2 cup) yellow pepper, diced
  • 125 ml (1/2 cup) mango, diced
  • 125 ml (1/2 cup) strawberries, diced
  • 60 ml (1/4 cup) fresh coriander, chopped
  • Salt and ground black pepper

Preparation

  1. Slice the scallops in half, widthwise.
  2. Place in a bowl and drizzle with lime or lemon juice.
  3. Add the cumin and season generously. Stir and set aside.
  4. In a separate bowl, mix the salsa ingredients.
  5. Fill small appetizer spoons with salsa and top each with a slice of scallop.
  6. Place on a tray and serve to your guests.
