Quebec cheese stuffed pork burgers with bacon and avocado

Ingredients
- 500 g (1 lb) extra-lean ground pork
- 60 ml (1/4 cup) onion soup mix
- 2 eggs, lightly beaten
- 125 ml (1/2 cup) bread crumbs
- 20 ml (1 heaping tbsp) Dijon mustard
- Salt and freshly ground black pepper
- 4 slices of semi-soft cheese, about 3 cm (1 1/4 in.) long and 1 cm (3/8 in.) thick
- 4 kaiser rolls
- 125 ml (1/2 cup) mayonnaise
- 4 leaves of Boston lettuce
- 1 red tomato, sliced
- 8 slices of bacon, cooked
- 1 avocado, peeled and sliced
Preparation
- Preheat the barbecue to maximum heat, 290°C (550°F).
- In a large bowl, mix together the pork, onion soup mix, eggs, bread crumbs and mustard.
- Season with salt and pepper.
- Stir well to combine all the ingredients.
- On the countertop, divide the meat into 8 equal parts.
- First make 4 patties, each topped with a slice of cheese in the centre.
- Then make 4 more patties and place them on top of the first ones.
- Press these patties to seal the cheese inside.
- Grill the patties, covered, for 5 to 6 minutes on each side.
- Place the rolls on the grill for a few seconds to heat them up lightly.
- Spread some mayonnaise on the inside of the rolls.
- Place 1 leaf of Boston lettuce and one slice of cheese on the bottom half of the rolls.
- Top with the patties.
- Finish with the bacon and avocado.
- Close the burgers with the top half of the rolls.
- Serve with homemade fries or a salad.
