Quebec cheese stuffed pork burgers with bacon and avocado

Ingredients

  • 500 g (1 lb) extra-lean ground pork
  • 60 ml (1/4 cup) onion soup mix
  • 2 eggs, lightly beaten
  • 125 ml (1/2 cup) bread crumbs
  • 20 ml (1 heaping tbsp) Dijon mustard
  • Salt and freshly ground black pepper
  • 4 slices of semi-soft cheese, about 3 cm (1 1/4 in.) long and 1 cm (3/8 in.) thick
  • 4 kaiser rolls
  • 125 ml (1/2 cup) mayonnaise
  • 4 leaves of Boston lettuce
  • 1 red tomato, sliced
  • 8 slices of bacon, cooked
  • 1 avocado, peeled and sliced

Preparation

  1. Preheat the barbecue to maximum heat, 290°C (550°F).
  2. In a large bowl, mix together the pork, onion soup mix, eggs, bread crumbs and mustard.
  3. Season with salt and pepper.
  4. Stir well to combine all the ingredients.
  5. On the countertop, divide the meat into 8 equal parts.
  6. First make 4 patties, each topped with a slice of cheese in the centre.
  7. Then make 4 more patties and place them on top of the first ones.
  8. Press these patties to seal the cheese inside.
  9. Grill the patties, covered, for 5 to 6 minutes on each side.
  10. Place the rolls on the grill for a few seconds to heat them up lightly.
  11. Spread some mayonnaise on the inside of the rolls.
  12. Place 1 leaf of Boston lettuce and one slice of cheese on the bottom half of the rolls.
  13. Top with the patties.
  14. Finish with the bacon and avocado.
  15. Close the burgers with the top half of the rolls.
  16. Serve with homemade fries or a salad.
