Beef burgers with blue cheese
Ingredients
- 30 ml (2 tbsp.) vegetable oil
- 30 ml (2 tbsp.) butter
- 375 ml (1 1/2 cups) white mushrooms, thinly sliced
- Salt and freshly ground black pepper
- 2 green onions, thinly sliced
- 750 g (1 1/2 lb) lean ground beef
- 30 ml (2 tbsp.) Dijon mustard
- 60 ml (1/4 cup) breadcrumbs
- 60 ml (1/4 cup) blue cheese, crumbled
- 4 kaiser rolls
- 250 ml (1 cup) arugula
- 60 ml (1/4 cup) tomato, cut into 1 cm (3/8 in.) dice
Preparation
- Preheat the barbecue to maximum heat, 290°C (550°F).
- In a skillet, heat 15 ml (1 tbsp.) of oil and 15 ml (1 tbsp.) of butter over medium-high heat.
- Sauté the mushrooms for 2 to 3 minutes.
- Season with salt and pepper while cooking. Remove the excess fat. Add the green onion and remove from the heat.
- Stir and set
- In a large bowl, mix together the ground beef, mustard and breadcrumbs.
- Season with salt and pepper.
- Mix with your hands until combined.
- Shape 4 patties and set aside.
- Grill the patties, covered, for about 5 minutes on each side, until well done.
- Turn off the barbecue and garnish the patties with the mushroom mixture.
- Add the cheese.
- Add the rolls to the grill.
- Close the lid and let rest in the warm barbecue for 1 to 2 minutes, until the cheese melts and the rolls warm up.
- Place the arugula on the bottom half of the rolls. Add the patties.
- Garnish with the tomato and close the rolls.
- Serve with homemade fries.
