Champagne Julep
- 90 ml (3 oz.) sparkling wine
- 30 ml (1 oz.) cognac
- 1 dash sugar cane syrup
- Crushed ice
- 6 fresh mint leaves
- 1 sprig fresh mint
Place the mint leaves and sugar cane syrup in a julep cup or old-fashioned glass.
Lightly crush with a pestle to dissolve the sugar and release the mint aromas.
Fill with crushed ice and add the cognac.
Stir three times and top up with the sparkling wine.
Garnish with a sprig of fresh mint.
