Turkey breakfast club sandwich

  • 4 bagels, sliced and toasted
  • 2 avocados, sliced
  • 4 eggs, pan-fried
  • Leftover turkey, thinly sliced
  • Salt and pepper

Crispy pancetta:

  • 8 slices of pancetta

Spicy mayonnaise:

  • 60 ml (1/4 cup) mayonnaise
  • 5 ml (1 tsp.) sriracha
  • The zest and juice from one lemon
  • Salt and pepper


Crispy pancetta:

  1. Preheat the oven to 180 °C (350 °F).
  2. Spread the slices of pancetta on a baking sheet lined with parchment paper.
  3. Cook in the oven for approximately 10 minutes, or until pancetta is crispy and golden.
  4. Set aside.

Spicy mayonnaise:

  1. In a bowl, combine all the ingredients.


  1. Spread the mayonnaise on a slice of toasted bagel.
  2. Top with turkey, pancetta, avocado slices and an egg cover.
  3. Top with the other slice of bagel.
