Ingredients
- 4 bagels, sliced and toasted
- 2 avocados, sliced
- 4 eggs, pan-fried
- Leftover turkey, thinly sliced
- Salt and pepper
Crispy pancetta:
Spicy mayonnaise:
- 60 ml (1/4 cup) mayonnaise
- 5 ml (1 tsp.) sriracha
- The zest and juice from one lemon
- Salt and pepper
Preparation
Crispy pancetta:
- Preheat the oven to 180 °C (350 °F).
- Spread the slices of pancetta on a baking sheet lined with parchment paper.
- Cook in the oven for approximately 10 minutes, or until pancetta is crispy and golden.
- Set aside.
Spicy mayonnaise:
- In a bowl, combine all the ingredients.
Serving:
- Spread the mayonnaise on a slice of toasted bagel.
- Top with turkey, pancetta, avocado slices and an egg cover.
- Top with the other slice of bagel.
