Budding Genius

- 45 ml (1 1/2 oz.) dry gin
- 45 ml (1 1/2 oz.) cooled infusion
- 10 ml (1/3 oz.) cane syrup (simple syrup)
- Club soda
- 1 tea bag (like Earl Grey)
- Ice cubes
- 2 lime wedges
- 4 - 5 blackberries
- 10 sage leaves
Infuse sage and tea bag in 250 ml of boiling water (infusion power to taste). Set aside.
Place one lime wedge, 3 or 4 blackberries and the syrup in a shaker and crush using a pestle.
Add a few ice cubes, the dry gin and 45 ml of the cooled infusion.
Shake vigorously for 8 to 10 seconds.
Strain into an old-fashioned glass containing a few ice cubes using an ice strainer.
Top up with soda club.
Garnish with a lime wedge, 1 or 2 blackberries and 1 sage leaf.
