Happy Camper

- 45 mL (1 1/2 oz) Chic Choc spiced rum
- 60 mL (2 oz) cold espresso coffee
- 180 mL (6 oz) ginger ale
- 3 drops pure lemon extract (optional)
- Ice cubes
- 1 slice of lemon, for garnish
Fill a 500-mL (2-cup) Mason jar with ice cubes.
Pour in the rum and coffee.
Add the drops of lemon extract and stir.
Rub the rim with the lemon slice and add the ginger ale.
Garnish with the slice of lemon.
