Pear Martini

- 60 ml (2 oz) vodka
- 30 ml (1 oz.) pear purée
- 30 ml (1 oz.) apple juice
- 8 ml (1/4 oz.) lemon juice
- 8 ml (1/4 oz.) cane syrup (simple syrup)
- 2 sprigs of fresh rosemary
- Ice cubes
- 1 pear wedge
Combine the cane syrup and a sprig of rosemary in a shaker and crush using a muddler.
Add the vodka, pear purée, apple juice, lemon juice and ice cubes. Shake vigorously for 8 to 10 seconds.
Strain into a martini glass using an ice strainer.
Garnish with a sprig of rosemary and pear wedge.
