Pisco Sour

- 45 ml (1 1/2 oz.) eau-de-vie (like Pisco)
- 30 ml (1 oz.) lemon juice
- 15 ml (1/2 oz.) cane syrup (or simple syrup)
- 1 egg white
- Ice cubes
- 2 to 3 drops of Angostura (concentrated bitters for cocktails)
Combine all ingredients, except the Angostura, in a shaker filled with ice cubes.
Shake vigorously for 8 to 10 seconds.
Strain into an old-fashioned glass containing a few ice cubes using an ice strainer.
Add a few drops of Angostura before serving.
