Star-studded Sangria, individual serving

- 150 ml (5 oz.) red wine, cold
- 25 ml (3/4 oz.) vodka, chilled
- 25 ml (3/4 oz.) spiced rum, chilled
- 75 ml (2 1/2 oz.) water
- Raw cane sugar
- Juice of 1 orange quarter
- Zest of 1 orange
- Sections of one orange half
- 2 bay leaves
- 1 cinnamon stick
- 1 clove
- 1 star fruit slice
- 1 orange slice
One day before, place the orange zest and sections into ice cube trays, fill with water and set aside in the freezer.
In a saucepan, over medium heat, bring the orange juice, water, 15 ml (1/2 oz.) of sugar, one bay leave, the cinnamon and clove to a boil. Lower the heat and reduce the mixture by 2/3. Let cool and infuse.
Place some sugar in a saucer. Rub the edge of an old-fashioned glass with a slice of orange and dip into the sugar.
Place a few fruit ice cubes in the glass.
Add the red wine, vodka and spiced rum.
Add the syrup, passing it through a sieve placed above the glass.
Add the remaining bay leave.
Stir using a mixing spoon.
Garnish with a star fruit slice and an orange slice.
