Star-studded Sangria, punch version

- 750 ml (25 oz.) red wine, cold
- 125 ml (4 oz.) vodka, chilled
- 125 ml (4 oz.) spiced rum, chilled
- 375 ml (12 1/2 oz.) water
- Raw cane sugar
- Juice of 1 orange
- Zest of 3 oranges
- Sections of 2 oranges
- 7 or 8 bay leaves
- 3 cinnamon sticks
- 3 cloves
- 2 star fruits, sliced
- 2 oranges, sliced
- Serves 4 to 5
One day before, place the orange zest and sections into ice cube trays, fill with water and set aside in the freezer.
In a saucepan, over medium heat, bring the orange juice, water, 80 ml (2 2/3 oz.) of sugar, 2 or 3 bay leaves, the cinnamon and cloves to a boil. Lower the heat and reduce the mixture by 2/3. Let cool and infuse.
Combine the red wine, vodka and spiced rum in a punch bowl or pitcher.
Add the syrup, passing it through a sieve placed above the bowl.
Stir using a mixing spoon.
Add the remaining bay leaves.
Place some sugar in a saucer. Rub the edge of old-fashioned glasses with a slice of orange and dip into the sugar.
Place a few fruit ice cubes at the bottom of the glasses.
Fill the glasses with sangria and garnish with a few fruit slices.
