Ingredients

  • 4 biftecks de côte de boeuf d'une épaisseur de 4 cm (1 1/2 po)
  • 1 bâton de cannelle
  • 1 anis étoilé
  • 10 ml (2 c. à thé) de grains de poivre
  • 60 ml (1/4 tasse) de cassonade
  • 15 ml (1 c. à soupe) de sel casher (ou gros sel) 

Preparation

  1. With a coffee grinder, mortar or small food processor, grind together the cinnamon, star anise and peppercorns.
  2. Add the brown sugar and salt.
  3. Rub the steaks with the spice mixture and let rest at room temperature for one hour.
  4. Heat the barbecue to medium-high, grill the steaks 3 to 4 minutes, then flip.
  5. Cook another 3 to 4 minutes for rare or 6 minutes for medium doneness.
  6. Let stand 5 minutes, covered, before serving.
