Spinach, cheddar and egg tartine

  • 30 ml (2 tbsp) butter
  • 1 package of fresh spinach
  • 2 green onions, thinly sliced
  • Cooking oil
  • 4 eggs
  • 4 slices of crusty bread
  • 4 slices of cheddar cheese
  • Salt and freshly ground black pepper


  1. In a skillet, melt the butter over medium heat. 
  2. Cook the spinach and green onions for a few minutes. 
  3. Pat dry if needed.
  4. Wipe the skillet with paper towel.
  5. Add oil to the skillet and cook the eggs sunny side up.
  6. Toast the slices of bread in the toaster. 
  7. Top each with the spinach mixture.  
  8. Top each toast with a slice of cheddar and an egg. 
  9. Season with salt and pepper.
  10. Serve with a homemade vegetable soup.
