Ricotta, tomato and ham tartine

Cooking time none (except for toasting the bread)

  • 250 ml (1 cup) firm ricotta cheese
  • 45 ml (3 tbsp) sun-dried tomatoes, finely diced
  • 2 green onions, thinly sliced
  • Salt and freshly ground black pepper
  • Olive oil
  • 185 ml (3/4 cup) cherry tomatoes, cut in half
  • 4 slices of multi-grain or country-style bread  
  • Butter
  • 8 thin slices of Serrano ham or prosciutto or Parma ham


  1. In a bowl, combine the cheese, sun-dried tomatoes and green onions.
  2. Season with salt and pepper. Stir.
  3. In another bowl, drizzle olive oil over the cherry tomatoes.
  4. Season with salt and pepper. Stir.
  5. Toast the slices of bread. Butter them very lightly.
  6. Spread some cheese mixture on each toast.
  7. Add two slices of folded ham.
  8. Top with cherry tomatoes.
  9. Drizzle with a little oil. Serve.
