Old Cuban

- 45 ml (1 1/2 oz.) aged rum
- 25 ml (3/4 oz.) lime juice
- 15 ml (1/2 oz.) simple syrup
- 6 mint leaves
- Champagne or sparkling wine
- Ice cubes
- 1 mint sprig
Combine all the ingredients, except for the champagne or sparkling wine in a shaker filled with ice cubes.
Shake vigorously for 8 to 10 secondes.
Double-strain into a chilled flute using an ice strainer.
Top up with champagne or sparkling wine.
Garnish with a sprig of mint.
